The front header bow is some kind of alloy material which deteriorates; not rust, however.  Similar to what happens to aluminum marine parts through galvanic corrosion.  Tough to repair.  If replacing, understand there are variations from year to year having to do with the latch pivots and the hooking mechanisms, as well as some hardware.

Corey:  It stands to reason that the dashpot and bracket should be the same for a 68 Holley, regardless of 350 or 500.  The relevant dimensions of the carb would be the same.  I looked through my pictures of original cars, but didn't find a shot that will help you.

Late to this topic, but including a photo of the correct '68 500 dashpot and bracket.  Notice the bellows does not have an external coil spring.  Ford complicates this part by continuing the part # (without changing the engineering revision suffix) when servicing the "long arm"/plunger version that was used on CJ and B9, etc.

Now, the question of 350 application and tranny---I have not studied.

I'm guessing from your photo that the top has shrunk over time, when combined with old silicone, the hinge split.  The glass silicone hinge can be refurbished, but the shrunken vinyl will have to taken into account, or you have the same old stress as before. 

Your original rear glass is quite desirable; please keep it if you replace the top.

They are S7MS part numbered.  I think the lines are the same, but the coolers have some differences.

I recall that Scott Fuller gave full wheel covers some thought (or maybe it was others thought he should?).  Seems like it was a cost feasibility issue?  Correct parts cost money, let's face it.
