is there any manual or publication out that has the assembly line markings listed or anyone that is willing to help me with it for a '67 GT500?

For future questions about this:  The time to get them is before disassembly with good clear color photos.  After sandblasting, dipping, parts changing, it might be too late.  And, you don't really want to copy off another car as build dates by both Ford, vendors, and Shelby American might not match.
If you are going to copy off another car, try to get the assembly dates very close, and match the options or they may be different marks.

Copying another car regardless of if close to your build date or not is only relevant if the car being copied is in a unrestored context. Copying a restored car could result in incorrect details especially if the restored car being copied does not have some kind of high concours pedigree. Regardless ,copying is not encouraged but learning the context and application of individual details is encouraged. This is so you understand why and can explain intelligently about it when asked to pass the information forward . This is one good place to get that information about assembly details .  ;)
