Not surprised to see this. When I was there last month they were working on 8 or so trucks with not 1 Mustang in sight.

I think the current offerings are tacky as hell and with the current GT500 along with the Raptor I'm not sure why anyone would want to spend additional money on the new Shelby stuff.

I was there last February. Yes, mostly trucks, but quite a few Mustang GT and GT500 conversions in the work stations.  What you do not see are very many Cobras.  There were still dozens of visitors taking the tour and shopping in the gift shop.  Since they were unveiling the latest SA offering that day at the National Auto Dealers Association Convention that day, a lot of the staff and crew was over there.  SA is still a busy place.
