I think most of the good guys are either not with us anymore or getting ready to not do that kind of work anymore. I think what you need is a place that pretty much only restores certain cars. Example, for us a place that does Fords and will do research to do the car correct. Can you imagine a Mustang trunk in that spackel paint that GM uses?
Maybe a forum post that asks, Shop recommendation in your area? I know where I go in New York, but I am not there anymore, I have no idea where to go for anything where I am now. Perhaps, ship a car up to my guy in NY?

Changes every year. Just find the guy who did the sheet metal and paint on the winning Riddler car and you can't go wrong - maybe broke but not wrong.

Which do you prefer?

I have a friend who is a reps a warehouse of automotive paint suppliers. He gets me regular solvent based paints. He said since I'm not in business it's still legal for me to buy and use it.
So I can spray that evil product in my garage with no regard for the solvents I put in the air but a commercial operation that is even required to have extensive filtering systems for water borne products can't. Welcome to the insanity of CA laws.
I don't know about paint and body, but I'd put Bob Perkins at the top of restoration shops.
