recommendations for outside services please

As I am getting my components together, I have realized that I will need some specialty help from some outside vendors. The following items will require professionals far better than me, to make them nice and original. If any of you have some recommendations for me as to who to send these items to, I would greatly appreciate it. Thank you in advance for all your knowledge and recommendations

I am sure others may have different opinions, but I would recommend replacing wiring if your original stuff is not serviceable.

Old wiring can be brittle, faded, cut and potentially dangerous, especially the stuff in the engine bay.

Thanks Coralsnake for the wiring reminder.  I did want to put that on the list.  Who do you all recommend for new wiring harnesses.  I want to replace them all.  Do anyone make correct (not the one harness fits all) harness based on the actual configuration of the vehicle?
